Breakfast ideas everyone will love:

Homemade Shake and Bake Pancake mix:

Pre prepare jars full of the dry ingredients from your favourite pancake mix. Then when you are on site, all you have to do is add the liquid and you’ve got home made pancakes for Christmas morning. This way you are avoiding all of the preservatives and extra sugar packed into the store bought Shake and Bakes.


  • 1 and 1/4 cup flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • In a medium bowl, combine all of the white ingredients. Pour into the jar. A rolled piece of paper makes a perfect funnel for this. Pack the layer down with a ladle.
  • Add the brown sugar to the jar and pack it down.
  • Top with some fresh fruits and you will have some very happy campers.

Homemade Chocolate Granola:

Another one you can pre prepare and serve straight away with yoghurt, milk or fresh fruit.


  • 1 cup of traditional rolled oats
  • Half a cup of pumpkin seeds
  • Half a cup of sultanas
  • Half a cup of chia seeds
  • Half a cup of shredded coconut
  • ½ cup of melted butter
  • ¼ cup of honey
  • ¼ cup of cocoa (or to taste)
  • Mix everything until all of the dry ingredients are wet and place in the oven for 15 minutes on 170 degrees, stirring periodically.

Lunch ideas:

BBQ lamb with rosemary:

Season your lamb cutlets (or whichever cut you prefer) to taste with salt, pepper and rosemary, then grill on your BBQ or campfire. It doesn’t get more simple or tasty than this.

Baked spuds:

The perfect addition to your BBQ lamb are baked potatoes. To change things up a little you can stuff them with whatever takes your fancy, such as cheese, butter, onions, bacon or even some tuna! Wrap the spuds in alfoil and place over the fire.

Billy can beer and bacon Damper:

We couldn’t go past this fresh take on an Australian classic. What better way to celebrate Christmas in the bush than with some traditional Australian Damper on the side?


  • 2 tablespoons olive oil
  • 1 small red onion, halved, thinly sliced
  • 2 middle bacon rashers, trimmed, cut into matchsticks
  • 1 tablespoon Always Fresh Relish Chilli Jam
  • 450g (3 cups) self-raising flour
  • 2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon sea salt
  • 280ml beer, at room temperature

Dessert idea

Peach Mallows:

This is a fresh and sweet option that the family is sure to love.

Ingredients per serve

  • 1 peach
  • 1/8 cup mini marshmallows or chocolate
  • 1 tablespoon butter (optional)
  • 1 teaspoon cinnamon
  • Handful any additional toppings (berries, coconut, peanuts, etc.)
  • Slice the peach in half and fill with butter and marshmallows, and then sprinkle both halves with cinnamon and toppings.
  • Wrap the peach in tin foil and cook over campfire for 3-5 minutes.
  • Open up and enjoy!


Chocolate Banana Boat:

A similar theme to the Peach Mallows, this is the camper’s version of a Banana Split!

Ingredients per serve

  • 1 Banana
  • Handful of chocolate chips
  • Sprinkling of crushed peanuts
  • Fresh cherries
  • Whipped Cream

Split the banana peel down the middle, while keeping the banana inside. Insert the chocolate chips and sprinkle with crushed peanuts and wrap in foil to cook over hot coals for 3-5 minutes. Open up and top with whipped cream and cherries to taste.


We find it hard to imagine that after a lunch like that in the Summer heat, you would want a lot for dinner.

....but if you are getting peckish, there is not much better, than leftovers folded between two pieces of bread in a sandwich. YUM!
